Les vedelles m\u00e9s grans de 12 mesos que no s\u00f3n sacrificades es converteixen en vaques destinades a la producci\u00f3 de llet o a la cria. Faran aquesta funci\u00f3 fins que es tornin improductives: en aquest moment, si el granger les posa un temps a pasturar i els proporciona una alimentaci\u00f3 rica en cereals, l\u2019animal es recupera i es converteix en una\u00a0<strong>vaca vella<\/strong>\u00a0amb la carn ideal per ser madurada. Aquesta categoria compr\u00e8n animals d\u2019entre 3 i 9 anys.<\/p>\n<p style=\"text-align: justify;\">Per la seva banda, els\u00a0<strong>vedells<\/strong>\u00a0que es deixen viure m\u00e9s de 12 mesos s\u2019han castrat, per fer-los m\u00e9s d\u00f2cils, i es dedicaran a l\u2019engreix o al treball al camp. Els primers se sacrificaran amb 2, 3 o 4 anys, per\u00f2 els que es dediquin al treball viuran bastant m\u00e9s, fins que el seu rendiment disminueixi.
